Chicken Adobo
Chicken Adobo is comfort food at its finest. The chicken slowly braises in a mixture of vinegar and soy sauce until tender and flavorful, creating a rich, tangy sauce that is perfect spooned over steamed rice.
Ingredients
- 1kg chicken thighs and drumsticks
- 120ml soy sauce
- 120ml white vinegar or cane vinegar
- 1 head garlic, cloves crushed and peeled
- 3 bay leaves
- 1 tablespoon whole black peppercorns
- 2 tablespoons vegetable oil
- 250ml water
- Steamed jasmine rice for serving
- Sliced green onions for garnish

Combine chicken, soy sauce, vinegar, garlic, bay leaves, peppercorns, and water in a large pot. Marinate for 30 minutes if time allows.

Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for 30 minutes, turning chicken halfway through.

Remove chicken pieces. Heat oil in a skillet and sear chicken until golden brown on all sides.

Meanwhile, increase heat under the braising liquid and reduce by half until slightly thickened.

Return seared chicken to the sauce. Simmer together for 5 minutes.

Serve over steamed jasmine rice, spooning the sauce generously over the top. Garnish with sliced green onions.
